Preparation
- Place the quartered onion, minced garlic, chopped carrots, and potatoes at the bottom of the slow cooker.
- Rinse the corned beef under cold water to remove excess salt and place it directly on top of the vegetables.

- Sprinkle the black peppercorns and mustard seeds over the brisket, then add the bay leaf.
Cooking
- Cover the slow cooker with its lid and set it to cook on low for 8-10 hours, or on high for 4-5 hours.
- When the cooking time is up, carefully remove the brisket from the slow cooker and allow it to rest for a few minutes before slicing.
- Serve the corned beef alongside the vegetables for a complete meal.
