  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (sliced)
For the Chicken
  • 2 pieces chicken breasts (for grilling)
  • 2 tablespoons olive oil
  • 1 each lemon (juiced)
  • Salt and pepper (to taste)

Preparation
  1. Preheat your grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper. Grill them for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Once cooked, let the chicken rest for a few minutes before slicing.
  3. While the chicken is grilling, prepare the salad by combining the mixed greens, halved cherry tomatoes, and sliced cucumber in a large mixing bowl.
Assembly
  1. After slicing the grilled chicken, add it to the bowl with the salad ingredients.
  2. Drizzle the salad with olive oil and lemon juice, tossing gently to combine. Adjust seasoning with more salt and pepper if needed.
  3. Serve immediately, allowing the vibrant colors and fresh flavors to shine through.

Notes

To enhance flavor, marinate chicken in lemon juice and herbs before grilling. For a plant-based alternative, substitute chicken with grilled tofu or chickpeas. Consider tossing in nuts or seeds for added crunch.
