Ingredients
  

Salad Base
  • 1 lb grilled chicken breast Seasoned with salt and pepper
  • 4 cups mixed greens (baby spinach, arugula, or lettuce)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber sliced
Dressing
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • to taste salt

Method
 

Preparation
  1. Preheat your grill or grill pan over medium-high heat. Season your chicken breast with salt and pepper.
  2. Grill the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F. Remove from the grill and let it rest.
  3. In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber. Toss them lightly.
  4. Slice the grilled chicken into strips and add it to the bowl of greens and vegetables.
  5. Drizzle olive oil and fresh lemon juice over the salad, then season to taste with additional salt and pepper.
  6. Toss everything gently to combine and serve immediately.

Notes

For enhanced flavor, consider marinating the chicken in olive oil, garlic, and herbs. You can add fruits like strawberries or peaches, and toasted nuts for crunch. This salad is versatile and can also replace chicken with grilled shrimp, tofu, or chickpeas.
