  • 4 pieces chicken breasts
  • 1 cup salsa verde
  • 1 cup shredded cheese (cheddar or Monterey Jack) Can substitute with other cheeses.
  • 1 tablespoon olive oil For searing the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • to taste Salt and pepper Adjust according to preference.
  • to garnish Fresh cilantro

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with garlic powder, cumin, salt, and pepper, then sear them in the skillet for 3-4 minutes on each side until golden brown.
  3. Place the seared chicken in a baking dish and pour the salsa verde over the top.
  4. Sprinkle shredded cheese on top of the salsa verde.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and melted.
  6. Garnish with fresh cilantro before serving.

Notes

Consider adding sliced bell peppers or onions to the baking dish for extra flavor. This dish can also be made ahead and stored in the fridge until ready to bake.
