  • 1 lb chicken breast Boneless and skinless
  • 1 can black beans Drained
  • 1 can corn Drained
  • 1 jar salsa Your choice of flavor
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • to taste Fresh cilantro for garnish

Method
 

Preparation
  1. Place the chicken breast at the bottom of the crockpot.
  2. On top of the chicken, add the drained black beans and corn.
  3. Add the jar of salsa, cumin, chili powder, salt, and pepper.
  4. Stir gently to combine all the ingredients.
Cooking
  1. Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  2. Once cooked, shred the chicken using two forks directly in the pot.
Serving
  1. Serve hot, garnished with fresh cilantro.

Notes

You can add extra vegetables like bell peppers or zucchini. Substitute chicken with turkey or tofu for a vegetarian option. Adjust spices for personal preference.
