  • 1 cup diced vegetables (such as carrots, potatoes, and bell peppers)
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Method
 

Preparation
  1. Start by placing the boneless, skinless chicken breasts at the bottom of the crockpot.
  2. Pour in the chicken broth, ensuring the chicken is well-covered with liquid.
  3. Add the diced vegetables, chopped onion, minced garlic, dried thyme, paprika, salt, and pepper on top of the chicken.
  4. Stir gently to combine all the ingredients without disturbing the chicken too much.
  5. Cover the crockpot and set it to cook on low for 6-8 hours, or until the chicken is thoroughly cooked and tender.
  6. When the cooking time is complete, shred the chicken using two forks and stir it back into the mixture to combine the flavors before serving.

Notes

For a lighter option, use skinless chicken thighs, or make it vegetarian by substituting chicken with tofu or chickpeas. Adding grains or legumes can make the meal more filling and nutritious. Serve with rice or quinoa, and consider garnishing with fresh herbs like parsley or cilantro.
