  1. Cook the Pasta: Begin by cooking your pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add minced garlic (or garlic powder if using) and sauté until fragrant, about 1 minute.
  3. Make the Sauce: Pour the milk or cream into the pot, stirring to combine. Gradually whisk in the cheese until melted and smooth. If using diced tomatoes, add them at this stage.
  4. Combine Ingredients: Stir in your cooked pasta and mix until well coated with the sauce. If it seems too thick, add vegetable or meat broth gradually until you reach the desired consistency.
  5. Season and Serve: Add salt, pepper, and any herbs you love. Stir well and allow it to simmer for a few minutes, letting the flavors meld together.
  6. Garnish and Enjoy: Transfer to bowls, add fresh herbs on top, and serve while warm.

Notes

Refrigerate leftovers in an airtight container for 3-5 days, or freeze for up to 3 months. Reheat gently with milk or broth for creaminess.
