  • 1 whole chicken 1 whole chicken (about 4-5 lbs)
  • 2 tablespoons 2 tablespoons olive oil
  • to taste Salt
  • to taste Black pepper
  • 1 1 lemon, halved
  • 4 cloves 4 garlic cloves, crushed
  • a handful Fresh herbs (such as rosemary, thyme, or parsley)

Method
 

Preparation
  1. Preheat the oven to 450°F (230°C).
  2. Pat the chicken dry with paper towels to remove excess moisture.
  3. Rub the outside and inside of the chicken with olive oil, then season generously with salt and black pepper.
  4. Stuff the cavity of the chicken with lemon halves, crushed garlic, and fresh herbs.
  5. Place the chicken on a roasting pan, breast side up.
Cooking
  1. Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
  2. Let the chicken rest for 10-15 minutes before carving.
  3. Serve and enjoy!

Notes

Use a meat thermometer to ensure the chicken is perfectly cooked. You can marinate overnight for enhanced flavor, and consider adding vegetables to the roasting pan.
