Preparation
- Preheat the oven to 450°F (230°C).
- Pat the chicken dry with paper towels to remove excess moisture.
- Rub the outside and inside of the chicken with olive oil, then season generously with salt and black pepper.
- Stuff the cavity of the chicken with lemon halves, crushed garlic, and fresh herbs.
- Place the chicken on a roasting pan, breast side up.
Cooking
- Roast in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- Let the chicken rest for 10-15 minutes before carving.
