  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth

  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese

  1. In a large pot, heat a splash of oil over medium heat. Add the diced onions and minced garlic, sautéing them until softened and fragrant, about 3-5 minutes.
  2. Stir in the shredded chicken, white beans, corn, chicken broth, green chilies, cumin, chili powder, salt, and pepper. Mix everything together, ensuring the spices are evenly distributed.
  3. Bring the mixture to a simmer and allow it to cook for about 20 minutes, stirring occasionally.
  4. Once the chili is heated through, stir in the sour cream and shredded cheese. Continue to cook until the cheese melts and everything is well combined and creamy.
  5. Serve hot, garnishing with additional cheese or your favorite toppings.

Notes

For a thicker chili, reduce the broth or add cornstarch mixed with water. Dairy-free options can use coconut cream. This dish is customizable for dietary needs.
