  • 2 cups shredded cooked chicken Use rotisserie chicken for quicker preparation.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Adjust based on preference.
  • 1 cup enchilada sauce Homemade or store-bought works.
  • 8 small corn or flour tortillas Use gluten-free options if needed.
  • 1/2 cup diced onion Can sauté for extra flavor.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • to taste Salt and pepper Adjust to preference.
  • for garnish Chopped cilantro Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, half of the cheese, enchilada sauce, diced onion, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  3. Take a tortilla and spoon about 1/4 cup of the chicken mixture onto the center. Roll it up tightly and place it seam-side down in a greased 9x13 inch baking dish.
  4. Continue the process with the remaining tortillas and filling until you have filled the baking dish.
  5. Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese for an extra cheesy topping.
  6. Place the baking dish in the oven and bake for 20-25 minutes or until the cheese is melted and bubbly.
  7. If desired, garnish with chopped cilantro and serve hot.

Notes

For a spicy version, add diced jalapeños or chili powder. You can also make these enchiladas ahead of time and store them in the refrigerator or freezer.
