Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, half of the cheese, enchilada sauce, diced onion, garlic powder, cumin, salt, and pepper. Mix well until all ingredients are evenly incorporated.
- Take a tortilla and spoon about 1/4 cup of the chicken mixture onto the center. Roll it up tightly and place it seam-side down in a greased 9x13 inch baking dish.
- Continue the process with the remaining tortillas and filling until you have filled the baking dish.
- Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese for an extra cheesy topping.
- Place the baking dish in the oven and bake for 20-25 minutes or until the cheese is melted and bubbly.
- If desired, garnish with chopped cilantro and serve hot.
Notes
For a spicy version, add diced jalapeños or chili powder. You can also make these enchiladas ahead of time and store them in the refrigerator or freezer.
