  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, sliced
  • 1/2 cup Red onion, thinly sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/2 cup Walnuts, toasted
  • 1/2 cup Dried cranberries or raisins
Dressing Ingredients
  • 1/4 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, walnuts, and dried cranberries.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
