  • 1 pound chicken thighs Boneless, skinless
  • 1/2 cup sweet chili sauce Use more or less based on spice preference
  • 3 cloves garlic Minced
  • 1 tablespoon ginger Grated
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
For the rice and vegetables
  • 2 cups rice Cooked according to package instructions
  • 1-2 cups vegetables of choice (e.g., bell peppers, broccoli) Cut into bite-sized pieces
  • 3 green onions sliced For garnish

Method
 

Preparation
  1. Marinate chicken thighs in sweet chili sauce, garlic, ginger, and soy sauce for at least 30 minutes.
  2. Cook rice according to package instructions.
Cooking
  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Add marinated chicken and cook until fully cooked and caramelized.
  3. Stir-fry the chosen vegetables in the same skillet until tender.
Serving
  1. To serve, place a scoop of rice in each bowl.
  2. Add the cooked chicken on top, followed by stir-fried vegetables and sliced green onions.

Notes

For more flavor, let the chicken marinate overnight. Use leftover rice for a quicker meal. Feel free to add any vegetables you like, such as carrots or snap peas.
