Ingredients
  

Fresh Vegetables
  • 4 cups fresh vegetables (such as tomatoes, cucumbers, and bell peppers) Use seasonal produce for the best flavor.
Broth and Seasoning
  • 4 cups vegetable broth
  • 1 tablespoon olive oil For sautéing the vegetables.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Adjust to taste.
Garnish
  • Fresh herbs (like basil or parsley) For garnish.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped vegetables and sauté for 5-7 minutes until they begin to soften.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Season with salt and pepper, and let it cook for another 10-15 minutes.
  5. Remove from heat and let it cool slightly.
  6. Blend the soup until smooth (or leave it chunky, as desired).
  7. Serve chilled or warm, garnished with fresh herbs.

Notes

Customize with different vegetables and spices. Store leftovers in an airtight container for up to three days.
