Ingredients
  

Salad Base
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 whole cucumber, diced
  • 1 whole red onion, thinly sliced
  • 1 cup feta cheese, crumbled
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Toss them to distribute the vegetables evenly.
  2. Crumble the feta cheese over the top of the salad mix.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  4. Drizzle the dressing over the salad and gently toss to combine, ensuring every ingredient is coated in the dressing.
  5. Serve immediately, allowing everyone to dig in while it’s fresh!

Notes
