  • 4 pieces Grilled Chicken Breasts Marinated in a mixture of olive oil, lemon juice, garlic, and herbs
  • 4 ears Corn on the Cob Boiled or grilled until tender
  • 4 cups Fresh Tomato Salad Mixed with onions, basil, olive oil, and vinegar
  • 1 medium Watermelon Cut into wedges or cubes
  • 4 cups Lemonade Homemade for better control of added sugars

Method
 

Preparation
  1. Marinate chicken breasts in olive oil, lemon juice, garlic, and your favorite herbs for at least 30 minutes.
  2. Boil corn in a pot of water for 7 to 10 minutes or grill them until tender.
  3. Chop tomatoes and mix them with diced onions, basil leaves, olive oil, and vinegar. Season with salt and pepper to taste.
  4. Slice watermelon into wedges or cubes. Optionally, sprinkle with feta cheese and mint.
Serving
  1. Arrange grilled chicken, corn, tomato salad, and watermelon on a platter.
  2. Serve with chilled lemonade to enjoy the refreshing summer feel.

Notes

For grilling alternatives, chicken can be roasted in the oven or cooked in a cast iron skillet. Add grilled vegetables like zucchini or bell peppers for more color.
