  • 2 pounds Chicken breasts Fresh or thawed for optimal flavor
  • 1 cup Barbecue sauce
  • 1 can Corn Drained
  • 1 can Black beans Drained and rinsed
  • 2 medium Bell peppers Chopped
  • 1 medium Onion Diced
  • 3 cloves Garlic Minced
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add barbecue sauce, corn, black beans, chopped bell peppers, diced onion, minced garlic, cumin, salt, and pepper.
  3. Stir to combine everything evenly, ensuring the chicken is well-coated.
Cooking
  1. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and tender.
  2. Once cooking is complete, shred the chicken in the crockpot and mix it with the other ingredients before serving.

Notes

Customize by adding jalapeƱos for spice or extra veggies like zucchini. Refrigerate leftovers for up to 3 days or freeze for up to 2 months.
