  • 1 cup frozen peas Adds sweetness and color at the end.
  • 3 tablespoons tomato paste Thickens the sauce and deepens the color.
Natural Spice Blend
  • 1.5 teaspoons sea salt
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried marjoram or oregano
  • 0.5 teaspoon ground black pepper
Other Essentials
  • 2-3 tablespoons neutral oil For browning the meat.

  • 2 cups halal beef or vegetable broth Minimal ingredients preferred.

  • 2 tablespoons cornstarch To thicken the stew.

Method
 

Preparation
  1. Chop and measure all ingredients: beef, onion, carrots, celery, and potatoes.
  2. Mix the spice blend in a small bowl.
Cooking
  1. Heat oil in a large pot and brown the beef cubes in batches.
  2. Sauté onions and celery in the same pot, then add garlic and tomato paste.
  3. Return beef and add broth, remaining spices, and bay leaf.
  4. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  5. Add potatoes and carrots, cover and simmer for another 30-40 minutes.
  6. Mix cornstarch with water and add to stew to thicken. Stir in peas and parsley before serving.

Notes

This stew can be customized by adding different vegetables or proteins. It can also be prepped ahead of time and reheated.
