  • 2 pieces chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup canned artichoke hearts, drained and chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a drizzle of olive oil over medium heat. Season the chicken breasts with salt and pepper and cook them until golden brown on both sides, approximately 5-7 minutes per side.
  3. While the chicken cooks, combine the chopped spinach, artichoke hearts, cream cheese, sour cream, Parmesan cheese, and garlic powder in a large bowl. Mix until a creamy mixture forms.
Baking
  1. After the chicken is cooked, place it in a baking dish and spread the spinach-artichoke mixture generously on top of each breast.
  2. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the topping is bubbly and golden.

Notes

Consider adding shredded cooked chicken or diced turkey for added protein. Substitute some cream cheese with ricotta or goat cheese for a variation. You can also add bell peppers or mushrooms to the spinach mixture for extra flavor. A sprinkle of red pepper flakes can add heat, and for a low-carb option, serve it over zucchini noodles or cauliflower rice.
