Preparation
- Preheat your oven to 450°F (230°C) to ensure a sizzling roast.
- Place the chicken breast-side down on a cutting board.
- Using kitchen shears, cut along both sides of the backbone and remove it completely.
- Flip the chicken over and press down on the breastbone until you hear a crack, ensuring it's flat.
- Drizzle olive oil over the chicken and season with salt, pepper, garlic powder, paprika, and fresh lemon juice.
- Transfer the chicken to a baking sheet, skin-side up.
- Roast in the preheated oven for 35-45 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for about 10 minutes before carving.
Notes
