Ingredients
  

For the cake
  • 1 box vanilla cake mix (15.25 ounces)
  • 3 pieces eggs Room temperature
  • ½ cup vegetable oil
  • 1 cup buttermilk Can be substituted with milk + vinegar
  • 1 teaspoon vanilla extract
For the cinnamon swirl
  • ½ cup brown sugar (packed)
  • cup all-purpose flour
  • 1 Tablespoon cinnamon
For the cream cheese glaze
  • 8 ounces cream cheese (softened) Room temperature
  • ½ cup butter (softened) Room temperature
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
For topping
  • cup sugar (granulated or sanding)
  • 2 teaspoons cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Ensure the oven is fully preheated.
  2. In a mixing bowl, combine the vanilla cake mix, eggs, vegetable oil, buttermilk, and 1 teaspoon of vanilla extract. Mix on low, then beat on medium speed for about 2 minutes until smooth.
  3. In a separate bowl, mix together the brown sugar, flour, and 1 tablespoon of cinnamon to prepare the cinnamon swirl mixture.
Baking
  1. Pour half of the batter into a greased Bundt pan. Sprinkle half of the cinnamon swirl mixture over the batter. Pour the remaining batter on top and finish with the remaining swirl mixture.
  2. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for about 10 minutes before inverting it onto a wire rack.
Glazing
  1. In a bowl, beat together the softened cream cheese, softened butter, 1 teaspoon of vanilla extract, and powdered sugar until smooth and creamy.
  2. Once the cake is cooled, drizzle the cream cheese glaze over the top.
Serving
  1. Slice the Snickerdoodle Bundt Cake and enjoy with family and friends, optionally garnishing with extra cinnamon sugar or berries.

Notes

For a lighter texture, substitute all-purpose flour with cake flour for the cinnamon swirl. Consider adding chopped nuts for a crunch.
