Ingredients
  

Chicken and Seasoning
  • 4 pieces boneless, skinless chicken breasts
  • 2 pieces lemons (juiced and zested)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cloves garlic (minced)
  • 1 cup chicken broth
  • to taste Salt and pepper
For Serving
  • 2 cups cooked white rice
  • for garnish Fresh parsley

Method
 

Preparation
  1. In a large slow cooker, combine the chicken breasts, lemon juice, lemon zest, thyme, rosemary, minced garlic, chicken broth, salt, and pepper. Stir everything together so that the chicken is thoroughly coated with the herbs and liquid.
Cooking
  1. Cover the slow cooker with its lid and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Finishing
  1. Once the cooking time is up, carefully remove the chicken breasts from the slow cooker. Shred the chicken using two forks, and then return the shredded chicken back to the slow cooker. Stir to combine it with the remaining juices and seasonings.
  2. Prepare the white rice separately according to package instructions.
  3. To serve, plate the rice, then spoon the lemon herb chicken mixture over the top. Garnish with fresh parsley.

Notes

Consider adding chopped vegetables such as carrots or bell peppers. Substitute with brown rice for added fiber. Spice it up with red pepper flakes if desired.
