  • 2 pounds boneless, skinless chicken breasts Use fresh or frozen
  • 1 packet ranch dressing mix
  • 8 ounces cream cheese, softened Cut into cubes before adding
  • 1 cup shredded cheddar cheese Can substitute with other cheese types
  • 1/2 cup chopped cooked green onions Optional, for garnish

Method
 

Preparation
  1. Place the chicken breasts at the bottom of your slow cooker.
  2. Sprinkle the ranch dressing mix evenly over the chicken.
  3. Cut the softened cream cheese into cubes and scatter them on top of the chicken and ranch mixture.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or on high for about 3-4 hours.
  2. Once cooked, use two forks to shred the chicken directly in the slow cooker and stir to combine.
  3. Sprinkle the shredded cheddar cheese over the top, cover, and allow it to melt for about 10 minutes.
Garnishing and Serving
  1. If using, top the dish with chopped green onions before serving.

Notes

Try different types of cheese or add vegetables like bell peppers or mushrooms for variation. For a low-carb option, serve over cauliflower rice or zucchini noodles.
