Ingredients

For the Slow Cooker
  • 2-3 pounds beef chuck roast Ideal cut for tenderness.
  • 4 cups beef broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
For Serving
  • 4 cups mashed potatoes Or substitute with rice or polenta.
  • 4 slices toasted bread Use crusty bread for better soaking.
  • 2 cups brown gravy Can be store-bought or homemade.

Method

Preparation
  1. In the slow cooker, add the beef chuck roast, beef broth, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Stir to combine all ingredients evenly.
  2. Cover and cook on low for 7-8 hours or until the beef is fork-tender.
  3. Once cooked, carefully shred the beef using two forks and stir it back into the flavorful broth.
Assembly
  1. To assemble the dish, place a slice of toasted bread on a plate.
  2. On top of the bread, add a generous serving of mashed potatoes.
  3. Spoon the shredded beef and broth mixture over the mashed potatoes.
  4. Drizzle the dish with brown gravy before serving.
  5. Optional: Add fresh herbs like parsley or chives for color and flavor.

Notes

For added nutrition, consider adding diced carrots, celery, or bell peppers to the slow cooker. You can swap the mashed potatoes for rice, polenta, or egg noodles. For a creamier gravy, whisk in some heavy cream or sour cream towards the end of cooking.
