Ingredients
  

For the marinade
  • 2 tbsp soy sauce divided
  • 1 tbsp oyster sauce optional
  • 1 tsp sesame oil
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
For the beef and vegetables
  • 1 lb beef strips (sirloin or ribeye)
  • 2 tbsp vegetable oil divided
  • 1 large onion, sliced
  • 1-2 pieces bell peppers, sliced (red and green for color)
For the sauce
  • 1 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch

Method
 

Preparation
  1. In a bowl, whisk together 2 tablespoons of soy sauce, oyster sauce (if using), ginger, garlic, and sesame oil to create the marinade.
  2. Toss the beef strips in the marinade and let sit for 10-15 minutes.
Cooking
  1. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the sliced onions and sauté until soft and slightly caramelized. Season with salt and pepper, then remove from the pan and set aside.
  2. In the same pan, heat 2 tablespoons of vegetable oil over high heat. Add the marinated beef strips and stir-fry for 2-3 minutes until browned.
  3. In a small bowl, whisk together 1 tablespoon of soy sauce, hoisin sauce, rice vinegar, and cornstarch. Pour the sauce over the beef and let simmer until it thickens.
  4. Add the sautéed onions and sliced bell peppers back into the pan, stirring to combine. Serve hot over steamed rice or noodles.

Notes

You can customize the spice levels, add more vegetables, or substitute the beef with tofu or seitan for a vegan option. Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
