Preparation
- Preheat the oven to 425°F (220°C).
- In a bowl, mix the soy sauce, Shaoxing wine, five-spice powder, minced garlic, and minced ginger with salt and pepper to taste.
- Rub the marinade all over the chicken, making sure to get under the skin.
- Place the chicken on a roasting rack in a baking dish and brush the skin with vegetable oil.
Cooking
- Roast the chicken in the preheated oven for about 1 hour, or until the skin is crispy and the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
- Garnish with chopped green onions before serving.
Notes
For juicier meat, consider brining the chicken a day ahead. You can add orange or lemon zest for a touch of citrus flavor. Experiment with different marinades for variety.
