  • 1 whole whole chicken (about 3-4 lbs)
  • 2 tablespoons soy sauce
  • 2 tablespoons Shaoxing wine Can be substituted with dry sherry or mirin.
  • 1 tablespoon five-spice powder
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • to taste Salt and pepper
  • 2 tablespoons vegetable oil For brushing.
  • 1 stalk green onion, chopped For garnish.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix the soy sauce, Shaoxing wine, five-spice powder, minced garlic, and minced ginger with salt and pepper to taste.
  3. Rub the marinade all over the chicken, making sure to get under the skin.
  4. Place the chicken on a roasting rack in a baking dish and brush the skin with vegetable oil.
Cooking
  1. Roast the chicken in the preheated oven for about 1 hour, or until the skin is crispy and the internal temperature reaches 165°F (75°C).
  2. Let the chicken rest for 10 minutes before carving.
  3. Garnish with chopped green onions before serving.

Notes

For juicier meat, consider brining the chicken a day ahead. You can add orange or lemon zest for a touch of citrus flavor. Experiment with different marinades for variety.
