Ingredients
  

For the roll-ups
  • 4 pieces Low-Carb Tortillas
  • 8 tablespoons Marinara Sauce Spread on tortillas.
  • 2 cups Shredded Mozzarella Cheese Generously sprinkle over sauce.
  • 20 slices Pepperoni Layer on top of cheese.
  • 2 tablespoons Olive Oil For brushing the tortillas.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Lay out the low-carb tortillas on a clean surface.
  3. Spread 2 tablespoons of marinara sauce on each tortilla, leaving a small border around the edges.
  4. Generously sprinkle shredded mozzarella cheese over the sauce.
  5. Layer on the pepperoni slices on top.
  6. Starting from one end, roll each tortilla tightly, tucking in the filling as you go.
Baking
  1. Place the rolled tortillas seam-side down on a baking sheet lined with parchment paper.
  2. Brush the outside with olive oil.
  3. Bake in the preheated oven for 15-20 minutes until golden brown and crispy.
  4. Once baked, let them cool for about 5 minutes. Slice into bite-sized pieces if desired.

Notes

These roll-ups can be customized with different cheeses, vegetables, and spices to suit your taste. Serve warm with extra marinara sauce for dipping.
