Preparation

- Lay out the low-carb tortillas on a clean surface.
- Spread 2 tablespoons of marinara sauce on each tortilla, leaving a small border around the edges.
- Generously sprinkle shredded mozzarella cheese over the sauce.
- Layer on the pepperoni slices on top.
- Starting from one end, roll each tortilla tightly, tucking in the filling as you go.
Baking
- Place the rolled tortillas seam-side down on a baking sheet lined with parchment paper.
- Brush the outside with olive oil.
- Bake in the preheated oven for 15-20 minutes until golden brown and crispy.
- Once baked, let them cool for about 5 minutes. Slice into bite-sized pieces if desired.
