Ingredients

Main Ingredients
  • 2 cups rotisserie chicken, shredded
  • 1 cup celery, diced
  • 1/2 cup red grapes, halved
  • 1/2 cup mayonnaise Can substitute with Greek yogurt for a lighter version.
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method

Preparation
  1. In a large bowl, combine the shredded rotisserie chicken, diced celery, and halved grapes. Stir gently to evenly distribute the ingredients.
  2. In a small mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth. This will serve as the dressing for your salad.
  3. Pour the creamy dressing over the chicken mixture and stir until all the ingredients are well combined. Ensure every piece is coated for the best flavor.
  4. Serve the succulent chicken salad on fresh lettuce leaves or use it as filling in a sandwich.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Do not freeze due to mayonnaise content. Warm gently in the microwave if desired.
