- Begin by shredding or chopping the rotisserie chicken into bite-sized pieces. Remove any skin if you prefer a lighter dish.
- In a large skillet over medium heat, sauté the diced vegetables until they become tender, about 5 to 7 minutes.
- Add the cooked rice or pasta to the skillet. Mix in the cream of chicken soup until everything is evenly coated.
- Fold in the shredded chicken, seasoning with salt, pepper, and any herbs or spices you choose. Mix until combined.
- Allow the mixture to heat through, then sprinkle cheese on top. Cover the skillet until the cheese melts.
Notes
Customize with different vegetables, spices, or add breadcrumbs/toppings for crunch. Can be made into a casserole by baking after combining all ingredients.
