  • 1 whole whole chicken 4-6 pound chicken recommended
  • 2 tablespoons olive oil For rubbing on the chicken
  • 1 teaspoon salt For seasoning
  • 1 teaspoon black pepper For seasoning
  • 1 tablespoon garlic powder For seasoning
  • 1 tablespoon dried thyme For seasoning
  • 1 whole lemon, halved To add flavor inside the chicken

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels to ensure crisp skin.
  3. Rub the olive oil all over the chicken, making sure to coat it evenly.
  4. Season the chicken generously with salt, black pepper, garlic powder, and thyme for a flavorful crust.
  5. Place the lemon halves inside the cavity of the chicken.
Cooking
  1. Place the chicken breast side up on a roasting pan.
  2. Roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C) at the thickest part of the thigh.
  3. Let the chicken rest for 10-15 minutes before carving.
Serving
  1. Serve with fresh herbs as garnish if desired.

Notes

Consider brining the chicken for added moisture. You can also serve with a variety of sides such as salads, roasted vegetables, or potatoes.
