Preparation
- Preheat your oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels.
- In a medium bowl, mix the olive oil, salt, pepper, garlic powder, and paprika.
- Rub the mixture evenly over the chicken thighs, getting under the skin.
- Place the chicken, skin-side up, on a parchment-lined baking sheet.
Cooking
- Roast the chicken in the preheated oven for 30-35 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and allow to rest for a few minutes before serving.
- Garnish with fresh herbs if desired.
Notes
For added flavor, marinate the chicken thighs for a few hours or overnight. Try adding chili powder or using boneless thighs for a quicker cook time.
