For the Chicken
  • 4 pieces chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Fresh herbs (optional for garnish)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a medium bowl, mix the olive oil, salt, pepper, garlic powder, and paprika.
  4. Rub the mixture evenly over the chicken thighs, getting under the skin.
  5. Place the chicken, skin-side up, on a parchment-lined baking sheet.
Cooking
  1. Roast the chicken in the preheated oven for 30-35 minutes or until the internal temperature reaches 165°F (74°C).
  2. Remove from the oven and allow to rest for a few minutes before serving.
  3. Garnish with fresh herbs if desired.

Notes

For added flavor, marinate the chicken thighs for a few hours or overnight. Try adding chili powder or using boneless thighs for a quicker cook time.
