  • 2 tablespoons olive oil

  • 1 lemon, quartered
  • 4 cloves garlic, crushed
  • Fresh herbs (like rosemary or thyme)

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels and place it in a roasting pan.
  3. Rub olive oil all over the chicken, making sure to cover every surface.
  4. Salt and pepper generously to enhance the flavors.
  5. Stuff the cavity of the chicken with lemon quarters, crushed garlic, and your chosen fresh herbs.
Cooking
  1. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  2. Once cooked, let the chicken rest for 10-15 minutes before carving and serving.

Notes

For extra crispy skin, try spatchcocking the chicken. Add vegetables to the roasting pan for a one-dish meal. Leftovers can be used in various dishes.
