Preparation
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels and place it in a roasting pan.
- Rub olive oil all over the chicken, making sure to cover every surface.
- Salt and pepper generously to enhance the flavors.
- Stuff the cavity of the chicken with lemon quarters, crushed garlic, and your chosen fresh herbs.
Cooking
- Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Once cooked, let the chicken rest for 10-15 minutes before carving and serving.
Notes
For extra crispy skin, try spatchcocking the chicken. Add vegetables to the roasting pan for a one-dish meal. Leftovers can be used in various dishes.
