  • 1 whole chicken 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons 2 tablespoons olive oil
  • 2 teaspoons 2 teaspoons salt
  • 1 teaspoon 1 teaspoon black pepper
  • 1 whole 1 lemon, halved
  • 3-4 sprigs 3-4 sprigs fresh rosemary or thyme
  • 4 cloves 4 garlic cloves, smashed

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Place the chicken in a roasting pan.
  4. Rub the olive oil all over the chicken.
  5. Season the chicken with salt and black pepper.
  6. Stuff the cavity of the chicken with the halved lemon, garlic cloves, and fresh herbs.
Cooking
  1. Roast the chicken in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  2. Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.

Notes

To enhance flavor, marinate the chicken overnight. You can add vegetables to the roasting pan to create a complete meal.
