Preparation
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Place the chicken in a roasting pan.
- Rub the olive oil all over the chicken.
- Season the chicken with salt and black pepper.
- Stuff the cavity of the chicken with the halved lemon, garlic cloves, and fresh herbs.
Cooking
- Roast the chicken in the preheated oven for approximately 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving.
Notes
To enhance flavor, marinate the chicken overnight. You can add vegetables to the roasting pan to create a complete meal.
