  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cloves garlic, minced
  • 1 tablespoon rosemary, chopped
  • 1 tablespoon thyme, chopped
  • 1 cup beef broth

Preparation
  1. Preheat your oven to 450°F (232°C). Start by rubbing the roast with olive oil, ensuring it's well-coated.
  2. Sprinkle the minced garlic, chopped rosemary, thyme, salt, and pepper over the roast, covering all sides for an even flavor.
Cooking
  1. Place the seasoned roast on a rack in a roasting pan to allow air circulation for even cooking. Roast in the preheated oven for about 15 minutes.
  2. After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1 to 1.5 hours for a medium-rare finish.
  3. Use a meat thermometer to check for doneness; aim for 135°F (57°C) for medium rare.
Resting and Serving
  1. Once the roast reaches the desired temperature, remove it from the oven and let it rest for 15-20 minutes to allow juices to redistribute.
  2. Slice and serve with beef broth or your favorite gravy.

Notes

For extra flavor, consider marinating the beef overnight. Use a slow cooker for an alternative, longer cooking method. Finish under the broiler for a crustier exterior if desired.
