Preparation
- Preheat your oven to 450°F (232°C). Start by rubbing the roast with olive oil, ensuring it's well-coated.
- Sprinkle the minced garlic, chopped rosemary, thyme, salt, and pepper over the roast, covering all sides for an even flavor.
Cooking
- Place the seasoned roast on a rack in a roasting pan to allow air circulation for even cooking. Roast in the preheated oven for about 15 minutes.
- After 15 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1 to 1.5 hours for a medium-rare finish.
- Use a meat thermometer to check for doneness; aim for 135°F (57°C) for medium rare.
Resting and Serving
- Once the roast reaches the desired temperature, remove it from the oven and let it rest for 15-20 minutes to allow juices to redistribute.
- Slice and serve with beef broth or your favorite gravy.
Notes
For extra flavor, consider marinating the beef overnight. Use a slow cooker for an alternative, longer cooking method. Finish under the broiler for a crustier exterior if desired.
