Ingredients

Main Ingredients
  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 package yellow cake mix
  • 1 cup butter, melted
  • 1 cup water

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a greased 9x13 inch baking dish, layer the chopped rhubarb evenly across the bottom.
  3. Sprinkle the sugar generously over the rhubarb.
  4. Evenly spread the dry cake mix over the sugar layer, taking care to cover the rhubarb completely.
  5. Pour the melted butter evenly over the cake mix, ensuring it seeps down into the layers.
  6. Finally, pour water over the top, allowing it to reach all areas of the cake mix.
  7. Bake in your preheated oven for 45-50 minutes or until the top is golden brown and bubbly.
  8. Let it cool slightly before serving to allow the flavors to meld.

Notes

For added flavor, mix in a teaspoon of vanilla or almond extract with the butter. You can also sprinkle cinnamon or nutmeg over the rhubarb for a warm spice note. Consider adding chopped nuts atop the cake mix for extra texture, and for a gluten-free version, use a gluten-free cake mix.
