  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1 box yellow cake mix
  • 1/2 cup butter, melted
  • 1 cup water
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the chopped rhubarb with sugar.
  3. Spread the rhubarb and sugar mixture evenly across the bottom of a greased 9x13 inch baking dish.
Assembly
  1. Sprinkle the dry yellow cake mix evenly over the top of the rhubarb.
  2. Drizzle the melted butter across the cake mix.
  3. Pour the water and vanilla extract over the mixture without stirring.
Baking
  1. Place the baking dish in the preheated oven and bake for approximately 40-45 minutes, or until the top is golden brown and the rhubarb is bubbling.
  2. Allow to cool slightly before serving warm.

Notes

This cake is best enjoyed fresh, but it's equally delightful the next day.
