Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the chopped rhubarb with sugar.
- Spread the rhubarb and sugar mixture evenly across the bottom of a greased 9x13 inch baking dish.
Assembly
- Sprinkle the dry yellow cake mix evenly over the top of the rhubarb.
- Drizzle the melted butter across the cake mix.
- Pour the water and vanilla extract over the mixture without stirring.
Baking
- Place the baking dish in the preheated oven and bake for approximately 40-45 minutes, or until the top is golden brown and the rhubarb is bubbling.
- Allow to cool slightly before serving warm.
Notes
This cake is best enjoyed fresh, but it's equally delightful the next day.
