Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan by greasing it with butter or non-stick cooking spray.
- In a medium bowl, combine 1 cup of sugar, 1/4 cup of flour, and the chopped rhubarb. Gently toss to coat the rhubarb and set this mixture aside.
- In another bowl, mix the melted butter with the eggs, vanilla extract, baking powder, and salt. Blend these ingredients well until fully incorporated.
- Gradually stir in 1 cup of all-purpose flour and the oatmeal until the mixture forms a dough-like consistency.
- Spread half of the oatmeal mixture evenly into the prepared pan to create the base layer.
Assembly and Baking
- Pour the rhubarb mixture evenly over the crust, ensuring it covers the base completely.
- Crumble the remaining oatmeal mixture over the top of the rhubarb layer, creating a nice topping.
- Place the pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown and set.
- Allow the Rhubarb Custard Bars to cool completely in the pan before cutting them into squares for serving.
