Ingredients
  

For the rhubarb filling
  • 2 cups rhubarb, chopped Use fresh rhubarb for the best flavor.
  • 1 cup sugar
  • 1/4 cup all-purpose flour
For the crust and custard layer
  • 1/2 cup butter, melted Make sure it’s not too hot when mixing.
  • 2 large eggs Large eggs work best.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup oatmeal Use old-fashioned oats for texture.
  • 1/4 cup brown sugar Packed brown sugar works best.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan by greasing it with butter or non-stick cooking spray.
  2. In a medium bowl, combine 1 cup of sugar, 1/4 cup of flour, and the chopped rhubarb. Gently toss to coat the rhubarb and set this mixture aside.
  3. In another bowl, mix the melted butter with the eggs, vanilla extract, baking powder, and salt. Blend these ingredients well until fully incorporated.
  4. Gradually stir in 1 cup of all-purpose flour and the oatmeal until the mixture forms a dough-like consistency.
  5. Spread half of the oatmeal mixture evenly into the prepared pan to create the base layer.
Assembly and Baking
  1. Pour the rhubarb mixture evenly over the crust, ensuring it covers the base completely.
  2. Crumble the remaining oatmeal mixture over the top of the rhubarb layer, creating a nice topping.
  3. Place the pan in the preheated oven and bake for 30-35 minutes or until the top is golden brown and set.
  4. Allow the Rhubarb Custard Bars to cool completely in the pan before cutting them into squares for serving.
