  • 2 tablespoons Lemon juice

Method
 

Preparation
  1. Wash and chop the cucumbers, tomatoes, and red onion into small, even pieces.
  2. In a large mixing bowl, combine the chopped vegetables with crumbled feta cheese.
  3. Drizzle with olive oil and squeeze fresh lemon juice over the mixture.
  4. Season with salt and pepper to taste.
  5. Toss everything together gently to mix without bruising the vegetables.
  6. Garnish with your choice of fresh herbs before serving.

Notes

Serve chilled. Adjust the ingredients based on seasonal availability. For heartiness, add grilled chicken or chickpeas. Vegan option: omit feta cheese.
