Ingredients
  

Dough Ingredients
  • 4 ½ cups all-purpose flour
  • 1 tablespoon sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 1 ¾ cups warm milk (or water)
  • 2 tablespoons melted butter
Boiling Solution
  • 9 cups water
  • ½ cup baking soda
Egg Wash
  • 1 large egg mixed with 1 tablespoon of water

Method
 

Preparation
  1. Gather all your ingredients.
  2. In a stand mixer bowl, combine flour, sugar, yeast, warm milk, melted butter, and salt.
  3. Use a dough hook to mix on medium speed for 4 to 5 minutes until smooth and elastic.
  4. Cover the bowl and let the dough rise in a warm space for 30 to 60 minutes until it doubles in size.
  5. Preheat your oven to 450°F and line two baking sheets with parchment paper.
Boiling and Baking
  1. Bring 9 cups of water and baking soda to a boil in a large pot.
  2. Once the dough has risen, punch it down and divide into 12 equal pieces.
  3. Roll each piece into a rope approximately ¾ inch thick and cut into 1 to 2-inch pieces.
  4. Carefully drop each piece into boiling water for about 30 seconds.
  5. Transfer bites to the prepared baking sheets and brush with egg wash, sprinkling with salt.
  6. Bake for 12 to 14 minutes until golden brown.
  7. Let them cool slightly before serving.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days. Freeze baked bites for up to 3 months, reheating in oven at 350°F for 10 minutes.
