Preparation
  1. In a large bowl, add the diced pineapple and cucumbers. Gently toss them together to ensure even distribution.
  2. In a small bowl, whisk together the lime juice, honey (if using), and a pinch of salt to create a zesty dressing.
  3. Pour the dressing over the pineapple and cucumber mixture. Using tongs or a large spoon, toss gently to combine all the ingredients.
  4. Finish by garnishing with fresh mint leaves before serving.

Notes

For an ultra-refreshing experience, let the salad chill in the refrigerator for about 30 minutes before serving. Serve it as a standalone dish, a side for grilled proteins, or on a bed of greens. Keep the dressing separate if prepared in advance to maintain freshness.
