  • 1 whole whole chicken
  • 4 tablespoons peri peri sauce
  • 2 tablespoons olive oil
  • 1 whole lemon (juiced)
  • 4 cloves garlic (minced)

Method
 

Preparation
  1. Preheat your grill or oven to 200°C (400°F).
  2. In a bowl, mix the peri peri sauce, olive oil, lemon juice, garlic, salt, and pepper.
  3. Rub the mixture all over the chicken, ensuring it’s well coated.
  4. Let it marinate for at least 30 minutes to allow the flavors to meld.
Cooking
  1. Place the chicken on the grill or in the oven and cook for about 45-60 minutes, or until the internal temperature reaches 75°C (165°F).
  2. Baste with additional peri peri sauce halfway through cooking if desired for extra flavor.
  3. Once cooked, let it rest for a few minutes before garnishing with fresh cilantro and serving.

Notes

For a deeper flavor, marinate the chicken overnight. Adjust spice levels by choosing mild or hot peri peri sauce. Can pair with various sides such as rice or salads.
