Preparation
- Preheat your oven to 375°F (190°C).
- Use paper towels to pat the chicken dry.
- Rub the olive oil all over the chicken.
- Season the chicken generously with salt, pepper, garlic powder, and onion powder.
- Stuff the cavity of the chicken with lemon wedges and fresh herbs.
Cooking
- Place the chicken on a roasting pan and roast it in the preheated oven for about 1.5 hours.
- Check that the internal temperature reaches 165°F (75°C) at the thickest part of the thigh.
- Once cooked, let the chicken rest for 10-15 minutes before carving.
Notes
