  • 1 teaspoon black pepper Freshly ground for better flavor.
  • 1 teaspoon garlic powder Add more for stronger garlic flavor.
  • 1 teaspoon onion powder Enhances the overall savory flavor.
  • 1 whole lemon, cut into wedges Citrus adds moisture and fragrance.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Use paper towels to pat the chicken dry.
  3. Rub the olive oil all over the chicken.
  4. Season the chicken generously with salt, pepper, garlic powder, and onion powder.
  5. Stuff the cavity of the chicken with lemon wedges and fresh herbs.
Cooking
  1. Place the chicken on a roasting pan and roast it in the preheated oven for about 1.5 hours.
  2. Check that the internal temperature reaches 165°F (75°C) at the thickest part of the thigh.
  3. Once cooked, let the chicken rest for 10-15 minutes before carving.

Notes

Consider brining for extra juiciness and experimenting with various herbs and spices. Leftovers can be used creatively in sandwiches or salads.
