  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes
  • 1 cup spinach
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving

  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken with salt and pepper, add to the skillet, and cook until browned on both sides, about 6-7 minutes. Remove from skillet and slice thinly.
  3. In the same skillet, add minced garlic and sauté for about one minute until aromatic.
  4. Stir in the orzo pasta and toast for a minute to enhance its flavor.
  5. Pour in the chicken broth, bring to a boil, lower the heat and simmer for about 10 minutes until the orzo is tender.
  6. Add the diced tomatoes and spinach, mixing until the spinach wilts.
  7. Top the orzo with the sliced chicken and sprinkle with freshly grated Parmesan cheese before serving.

Notes

This dish is versatile. Consider adding bell peppers, zucchini, or mushrooms for added nutrition. You can also substitute chicken with shrimp or plant-based proteins. For a creamy variation, stir in cream cheese or coconut milk after cooking.
