Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper to ensure it’s well coated.
  3. Place the seasoned chicken in a large roasting pan, spacing it out to promote even cooking. Surround the chicken with the mixed vegetables.
  4. For extra flavor, arrange the lemon slices on top of the chicken.
Cooking
  1. Roast in the oven for approximately 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  2. Serve warm right from the pan for a hearty and satisfying meal.
