Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper to ensure it’s well coated.
- Place the seasoned chicken in a large roasting pan, spacing it out to promote even cooking. Surround the chicken with the mixed vegetables.
- For extra flavor, arrange the lemon slices on top of the chicken.
Cooking
- Roast in the oven for approximately 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
- Serve warm right from the pan for a hearty and satisfying meal.
