- Heat olive oil in a skillet over medium heat for about a minute.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides and fully cooked through, approximately 6-7 minutes on each side. Once done, remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sliced mushrooms. Sauté until the mushrooms are tender, about 4-5 minutes, stirring occasionally.
- Pour in chicken broth and bring to a simmer, allowing the flavors to meld together.
- Reduce heat, and stir in heavy cream, cooking for another 2 minutes until the sauce thickens slightly.
- Return the cooked chicken to the skillet, making sure to coat it well with the creamy sauce.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, experiment with different mushrooms or add vegetables such as spinach or bell peppers. Serve over pasta or rice for a heartier meal.
