  • 2 pieces chicken breasts Boneless and skinless
  • 1 cup mushrooms, sliced Use any variety of mushrooms
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream Can substitute with half-and-half or coconut milk
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat for about a minute.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides and fully cooked through, approximately 6-7 minutes on each side. Once done, remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sliced mushrooms. Sauté until the mushrooms are tender, about 4-5 minutes, stirring occasionally.
  4. Pour in chicken broth and bring to a simmer, allowing the flavors to meld together.
  5. Reduce heat, and stir in heavy cream, cooking for another 2 minutes until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet, making sure to coat it well with the creamy sauce.
  7. Garnish with fresh parsley before serving.

Notes

For extra flavor, experiment with different mushrooms or add vegetables such as spinach or bell peppers. Serve over pasta or rice for a heartier meal.
