  • 1 cup Spinach Fresh spinach is recommended; can substitute with kale.
  • 1 cup Diced Tomatoes Fresh or canned tomatoes work well.
  • 4 strips Bacon Can substitute with turkey bacon or vegetarian alternatives.
Sides and Beverages
  • 4 slices Bread Any bread can be used; consider whole grain for a healthier option.
  • 2 cups Fresh Fruit A mix of seasonal fruits like berries, bananas, or melons.
  • 4 cups Juice Orange juice, apple juice, or your preference.
  • 4 cups Coffee Freshly brewed coffee to serve with the meal.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together eggs, milk, salt, and pepper until well combined.
  3. In a skillet over medium heat, cook bacon until crispy. Remove it from the skillet and drain it on paper towels.
  4. In the same skillet, sauté spinach and diced tomatoes until softened.
  5. Crumble the cooked bacon and mix it with the sautéed spinach and tomatoes into the egg mixture.
  6. Pour this mixture into a greased baking dish and top with shredded cheese.
Baking
  1. Bake for 25-30 minutes, or until the egg is set and the top is golden.
Serving
  1. Serve warm with slices of toasted bread and a side of fresh fruit.
  2. Enjoy the moment together with a glass of juice and brewed coffee.
