  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup tortilla chips, crushed
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, half of the cheese, salsa, cumin, chili powder, salt, and pepper. Mix until well combined.
  3. Spread the mixture into a greased 9×13 inch baking dish.
Topping and Baking
  1. Top with crushed tortilla chips and sprinkle the remaining cheese over the top.
  2. Bake in the preheated oven for 20-30 minutes or until the cheese is bubbly and golden.
  3. Let cool slightly before serving.
