  • 1/3 cup sun-dried tomatoes, chopped

  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional for spice)
  • 8 oz pasta (e.g., penne, rigatoni, or fettuccine)

Preparation
  1. Season the sliced chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken slices and cook for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Sauce Preparation
  1. In the same skillet, add minced garlic and sauté until fragrant (about 30 seconds).
  2. Stir in the sun-dried tomatoes, then pour in the chicken broth and heavy cream. Mix well and bring to a simmer.
  3. Stir in the grated Parmesan cheese and Italian seasoning. Allow the mixture to thicken slightly, which should take about 3-5 minutes.
Combining Ingredients
  1. Return the chicken to the skillet and add the cooked pasta. Toss everything together, ensuring the chicken and pasta are well-coated in the creamy sauce.
  2. Sprinkle crushed red pepper flakes if desired and garnish with fresh basil before serving.

Notes

For a healthier version, consider baking the chicken instead of frying. For a vegetarian option, switch out the chicken for grilled mushrooms or zucchini.
