Ingredients
  

Salad Base
  • 4 cups kale, chopped Wash and chop into bite-sized pieces.
  • ½ cup grated Parmesan cheese For sprinkling over the salad.
  • 1 cup croutons Add for crunch.
Dressing
  • ¼ cup olive oil Use extra virgin for better flavor.
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste Adjust according to preference.

Method
 

Preparation
  1. Wash and chop the kale into bite-sized pieces. Massage the kale gently to soften it.
  2. In a large mixing bowl, add the chopped kale and sprinkle the grated Parmesan cheese on top.
Dressing
  1. In a smaller bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper until well combined.
Assembly
  1. Pour the dressing over the kale and cheese mixture. Toss to coat the kale evenly.
  2. Add croutons immediately and toss gently again. Serve right away for maximum crunch.

Notes

To customize, consider adding grilled chicken, nuts, or other leafy greens. Store leftovers in an airtight container and consume within 1-2 days.
