Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream together softened butter and sugar until light and fluffy.
  5. Beat in eggs one at a time, followed by vanilla extract.
  6. Gently fold in sour cream.
  7. Gradually add the flour mixture into the wet ingredients, mixing gently.
  8. Fold in the crushed pineapple.
Baking
  1. Pour the batter into the prepared pan and spread evenly.
  2. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Glazing
  1. While the cake is baking, whisk together icing sugar and pineapple juice until smooth.
  2. Once the cake has cooled, pour the glaze over the cake.

Notes

For a tropical twist, consider adding shredded coconut or spices like cinnamon. Cake can be served with whipped cream or fruits.
