Ingredients
  

Main ingredients
  • 2-3 lbs beef roast (such as chuck roast) Chuck roast is recommended for its tenderness.
  • 1 packet Italian dressing mix
  • 1 jar pepperoncini peppers Add some juice for more flavor.
  • 1 cup beef broth Use low-sodium if preferred.
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the beef roast in the crockpot.
  2. Sprinkle the Italian dressing mix evenly over the roast.
  3. Add the sliced onion and bell pepper on top of the roast.
  4. Pour in the beef broth, and add the pepperoncini peppers along with some of their juice.
  5. Season the mixture with minced garlic, salt, and pepper to taste.
Cooking
  1. Cover the crockpot, setting it to cook on low for about 8 hours or until the beef is tender and shreds easily.
  2. When the cooking time is done, remove the beef from the crockpot, shred it using two forks, and mix it with the juices before serving.

Notes

For variations, add more veggies like carrots or celery, or spice it up with crushed red pepper flakes. Serve on sandwiches, with rice, or pasta. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
